Yes. This was in a local freebie, quesadillas.
Thaw out a sixteen-ounce bag of frozen spinach. Drain the spinach. Grab two cups of your favorite cheese (grated) and 10 flour tortillas. Place five tortillas on a cooking sheet or plate. Add half the cheese to the tortillas. Then add all the spinach to the five tortillas. Top with remaining spinach and then with a tortilla.
Cook in a medium warm skillet. Each side needs to be cooked for two to three minutes. Remember to fip and cook both sides. Then cut up into geusadillas and you've got cheese and spinach.
To that recipe, I usually add some refried beans or black beans. Sometimes I'll add a jalapeno pepper as well.
