Got you, think I've got one for you. We're using canned goods and rice.
Cook a cup of rice. Set aside to cool.
In a large bowl, add 1 can (14 ounce) of red beans, 1 can (same size) of black beans and 1 can of corn. All cans are drained and rinsed before adding to the bowl.
Slice an onion into thin rings, add to the bowl. Add the (cooled) rice to the bowl. Add a fourth cup of red wine vinegar and a fourth cup of olive oil. Salt and pepper to taste. Add a little dried oregano. If you have a fresh bell pepper, slice that into strips and add it but not necessary.
Toss and place in the fridge. Serve after it chills.
It's a nice and easy salad. You've got the beans and the corn and the onion, it's covering a lot of things.
