2 bell peppers cut into long slices
1 onion, sliced into rings then halved
8 ounces fresh mushrooms chopped
1 small head of broccoli chopped
1 squash sliced thin
Do you have a cast iron or oven proof skillet that you can place in the oven and cook in there with? Don't guess. If you don't think you do, you most likely don't. If you have an oven proof skillet, use it. Otherwise use any skillet. Add olive oil to a skillet, heat the skillet and add vegetables, stir to saute vegetables for about 8 minutes.
Are you using an oven proof skillet? If so you'll continue the recipe in it. If not, transfer contents of skillet into a a casserole dish to cook in the oven.
In a bowl, crack open 5 eggs, add 1/2 cup of milk, whip the contents. Pour over the sauteed contents (whether they are in an oven proof skillet or a casserole dish, pour mixture over it). Add a dash of pepper. Sprinkle with 8 ounces of shredded cheese to the top and place in an oven preheated to 350 degrees. (Don't have a preheat function? Just put the oven on 350 for 15 minutes before placing casserole dish or skillet in oven. If you do have a preheat function on your dial, remember to turn it now to bake.)
Bake in oven for approximately 15 to 20 minutes.
When serving, you can cut into squares or pie slices, as you please. You can garnish with salsa or sour cream.
Okay, the big OWS news this week was the attack in Oakland. Bill Van Auken (WSWS) writes:
Tuesday’s near-fatal attack by Oakland, California police on a young veteran during an anti-Wall Street protest is part of a wave of repression that has provoked nationwide anger over the growing assault on democratic rights.
Demonstrators poured into the streets of Oakland, New York City and other US cities to denounce the vicious attack on Scott Olsen, 24, who survived two tours of duty in Iraq, only to be cut down by the police.
Olsen was felled by a supposedly non-lethal police projectile, fired directly at his head. The attack came in the midst of what amounted to a police riot staged in response to a Tuesday night protest over the police eviction and mass arrest of Occupy Oakland demonstrators at their encampment in the city’s Frank Ogawa Plaza. When other demonstrators went to his aid, they too were attacked with tear gas.
