Eggplant is plentiful right now but three e-mails came in on how to cook it? There are many ways but we're going to do it diced for this recipe. This is basically creating a "sauce" you can serve over pasta.
Buy one large eggplant. You will cut the ends off on both sides. Slice into one inch or less rounds. Then we will cut the rounds up into small pieces. Then slice (or mince) 2 garlic cloves.
Cook pasta according to directions on package during this.
In a large skillet on the stove, heat two tablespoons of olive oil. Add eggplant and garlic. Allow to cook on medium-low heat for about five minutes stirring at least once a minute.
Dice 4 roma tomatoes. Open a 16 ounce can of black olives (pitted).
Add tomatoes and olives to a large bowl. Add contents of skillet to the bowl. Stir contents.
Place pasta on plates and add "sauce" (contents of bowl). Add Parmesan cheese.
I like to serve this with a semi-green salad ('semi-green'? I like to slice radishes for the salad) and some french bread.
